My first taste of mochi waffles was way back in 2016 on a special dental school graduation trip with my husband and in-laws to Maui.
And let me tell you, it was love at first bite.
I ate them every single day of our trip (and on 4 more trips we took in the coming years).
In 2021, I was pregnant and majorly craving them.
So I spent weeks making dozens of waffles trying to get it just right.
I spent so much time developing this recipe I wore out my waffle maker and I had to order a new one in order to be able to keep working on this recipe (here is a newer version to the one I got).
To say I was determined is an understatement.
And after all that delicious work, I finally created a recipe that tastes as close as we can remember to the ones we had in Maui.
This summer I thought it would be fun to create a Mochi Waffle Cake and of course, I had to use my favorite mochi waffle recipe and my go-to homemade whipped cream recipe!

Mochi Waffle Cake
This Mochi Waffle Cake is made with homemade whipped cream, and mochi waffles that are beautifully golden brown with a light and chewy center, and topped with lots of fruit.
Ingredients
Mochi Waffles:
- 1 & 1/2 Cups Mochiko Sweet Rice Flour
- 3/4 Cup All-Purpose Flour
- ¼ Cup Sugar
- 1 & ½ Teaspoons Baking Powder
- 1 & ½ Teaspoons Corn Starch
- 1/2 Teaspoon Salt
- 2 Large Eggs
- 1 & 1/4 Cups Whole Milk
- 2 Teaspoons Vegetable Oil
- 1 & 1/4 Teaspoons Pure Vanilla Extract
Homemade Whipped Cream:
- 3 Cups Heavy Whipping Cream
- 3 Tablespoons Granulated Sugar
- 1 Teaspoon Pure Vanilla Extract
Instructions
Mochi Waffles Instructions:
- First, preheat your waffle maker. If you are using a Belgian waffle maker, set it to 6.
- In a large bowl, mix the 1 and 1/2 cups mochiko flour, 3/4 cup all-purpose flour, 1/4 cup sugar, 1 and ½ teaspoon baking powder, 1 and ½ teaspoon corn starch, and 1/2 teaspoon salt. Set to the side.
- Next, separate the 2 egg yolks from the egg whites.
- In a small bowl, mix the 1 and 1/4 cups whole milk, 2 teaspoons vegetable oil, 1 and 1/4 teaspoon vanilla extract, and 2 egg yolks.
- In a separate bowl, whip the egg whites until stiff peaks form. Set to the side.
- Carefully fold the egg whites into the wet ingredients. Then fold the wet ingredients into the dry ingredients.
- Scoop the mochi waffle mix into the waffle iron and cook for 2-3 minutes until golden and crispy.
- Repeat step 7 to create five mochi waffles. Set them to the side to cool.
Homemade Whipped Cream Instructions:
- In a medium bowl combine the 3 cups of heavy whipping cream, 3 tablespoons of sugar, and 1 teaspoon of pure vanilla extract.
- Blend on the highest speed for 3-5 minutes, or until stiff peaks form.
Mochi Waffle Cake Instructions:
- Place a small scoop of whipped cream on the top of your cake stand to help hold the cake in place.
- Then place the first (of 5) waffles on top of the whipped cream in the center of your cake stand.
- Add a layer of whipped cream and then another waffle. Repeat this process until you have a 5-layer waffle cake with whipped cream between each layer.
- Top with the whipped cream, lots of fruit, macadamia nuts, and shredded coconut.
- Cut, serve, and enjoy!
