
Confession. I have made & ate all 3 batches of Simple Roasted Garlic Hummus since I posted a picture of this hummus on Instagram. Roger might have had a bite or two, but for them most part I consumed it all. Once I think I even ate the whole batch in about 24 hours – although I try really hard not to remember such things…
But yes, in case you still aren’t convinced on how I feel about this recipe I’ll just go ahead and say it – I love this hummus!
I love that I don’t need any special ingredients & that everything I need is readily available in my kitchen to make this Simple Roasted Garlic Hummus.
Although because I just ate 3 batches I am now out of garbanzo beans & extra virgin olive oil… But I guess that’s my own fault for being so greedy for hummus!

This Simple Roasted Garlic Hummus is the perfect side dish for your favorite veggies & pita bread!
Ingredients:
4 Large Garlic Cloves (unpeeled)
1 Can Garbanzo Beans (chickpeas)
2 Tablespoons Lemon
2 Tablespoons of Garbanzo Bean Liquid
3 Tablespoons Extra Virgin Olive Oil – Plus extra for topping
1 Dash Salt
Garlic Powder to Taste – Optional
Paprika – Optional Topper

First, in a small pan – I used an egg pan – roast the garlic cloves (unpeeled) on all sides at medium heat, until they become tender & begin to darken on the outside.
While the garlic is roasting drain the garbanzo beans, saving the garbanzo bean liquid in a bowl, & pour the garbanzo beans into a food processor. Then add 2 tablespoons of lemon, 2 tablespoons of the garbanzo bean liquid, 3 tablespoons extra virgin olive oil, 1 dash of salt, & the 4 cloves of garlic to the garbanzo beans. Chop & grind the ingredients in the food processor until it becomes a smooth hummus. Then add more salt & garlic powder to taste.

Serve with a sprinkling of paprika & a drizzle of extra virgin olive oil with your favorite veggies, pita chips, or pita bread!
