Homemade Watermelon Syrup

The answer to the question of what to do with all that extra watermelon liquid from the Watermelon Fruit Leather’s I shared with you on Tuesday.

 

Watermelon Syrup

 

I had read about how easy it is to make a fruit syrup and thought I might as well give it a try, so I did! Now this isn’t something that just anyone will like, this is a recipe for a foodie who loves watermelon – just like the Watermelon Fruit Leathers. Roger wanted me to make that clear when writing this recipe. So attention all watermelon lovers – this ones for you

 

 

Ingredients

4 Cups Watermelon liquid

Sugar – the amount of sugar will depend on how sweet your watermelon is, I added about 1 cup sugar but you can add more or less depending on how sweet you want your watermelon syrup.

 

 

In a large pot at medium high heat bring the watermelon liquid to a boil, whisk in the sugar, and turn the temperature to down medium low to let simmer until thick, stirring occasionally.

 

My watermelon syrup took over an hour to thicken up, but honestly I had a hard time keeping an eye on the pot and of course I immediately forgot about it and it boiled over – so make sure you keep an eye on it! After it boiled over a little, and made a mess, I turned it down too low and it wasn’t simmering at all so it definitely took longer than it should have for this syrup to thicken.

 

Watermelon Syrup on Ice Cream

 

Once thick, let cool, and serve over pancakes or vanilla ice cream or anything else you can think of, or store it in an airtight container in your refrigerator for up to a week.

  1. For anyone who is thinking of making this, I think the sugar might be mandatory. I just tried making this and I used only a tiny bit of honey, and it boiled away to almost nothing. I started with 10 cups of juice, and got a tablespoon and a half of syrup :/ I think maybe the more sugar you add, the quicker it thickens up into a candy almost… since sugar and liquid boiled will make candy. Hope this helps someone!

    1. I definitely agree that sugar is needed, you might not need the whole 1 cup of sugar that I used for this recipe (as I mentioned in the ingredients section), although it definitely sweetens the deal! 🙂 So sorry your syrup recipe didn’t turn out, I hope you get a chance to try this recipe! 🙂

      1. What I did get was delicious! I am doing to give it to my little guy when he gets home from school in about an hour, with some fruit to dip in it 🙂

  2. It’s so brilliant that you made use of leftover watermelon liquid for this! Plus, it sounds seriously divine. I would totally do it over ice cream and pancakes or maybe some plain Greek yogurt!

    1. Oh I bet it would be good over plain Greek yogurt! I drizzled the Watermelon Syrup over some vanilla ice cream with some chocolate syrup and it was delicious! I hope you enjoy the Watermelon Syrup!
