Do you remember when I used to share a new recipe every week?

I use to spend so much time creating and developing new recipes.

I’d spend the first 6 months of each year creating double the recipes so that by the first week of July I’d be 6 months ahead with recipe content creation so that I wouldn’t get behind during the hectic fall and Christmas seasons.

But since little Roger joined our family life has been extra busy, in a good way.

I will admit, I do miss creating new recipes and the lessons learned from trial and error.

For the last 17 months, Roger has been the primary cook/baker in our home.

And over the last year+, he has sporadically been working on creating a tasty popover recipe.

He started with a muffin pan trying our different basic/generic popover recipes but they didn’t have any flavor.

So he upgraded to this popover pan and started developing his own recipe with yummy flavor and a soft, moist, airy center.

I’ve taste tested a plethora of popovers with a variety of different cheeses, but this one with its creamy herb cheese is our absolute favorite!

Herb Cheese Popovers

Ingredients

Scale
  • 4 Large Eggs, room temp
  • 1 & 1/4th Cup 2% Milk, warm (~125 degrees)
  • 3/4 Heaping Teaspoon Salt
  • 1/2 Heaping Teaspoon Black Pepper
  • 3/4 Teaspoon Yellow Mustard
  • 1 & 1/4 Cups All Purpose Flour
  • 4 Tablespoons Butter, melted
  • 1/3 Cup Herb Gournay Cheese

Optional Toppings

Instructions

  1. First, place your popover pan in the oven and then preheat the oven to 450 degrees Fahrenheit.
  2. In a blender, add the 4 eggs, 1 & 1/4 cups milk, 3/4 heaping teaspoon salt, 1/2 heaping teaspoon black pepper, and 3/4 teaspoon yellow mustard. Blend on low for 15 seconds, then on medium for 15 seconds.
  3. Next, add the 1 & 1/4 cups flour and 4 tablespoons melted butter. Blend on low for 15 seconds, then on medium for 15 seconds.
  4. Then, add 1/3 cup herb gournay cheese. Blend on low for 15 seconds.
  5. Quickly and carefully remove the popover pan from the hot oven. Thoroughly spray oil in each popover cup and fill each cup, to almost full, with the popover mixture.*(1-2)
  6.  Place the popovers in the oven and bake for 20 minutes at 450. degrees Fahrenheit.
  7. Then drop the heat to 350 degrees Fahrenheit and bake for 8 more minutes. Do NOT open the oven while the popovers are baking.
  8. Once baked and golden, remove from the oven, let cool slightly, and enjoy! *(3)

Notes

  1. If you want to add crumbles of herb cheese to your popovers, pour popover mixture into each popover cup to 3/4 full, add 3-5 crumbles to each of them, then top each one with the remaining popover mixture.
  2. You want to work quickly since the pan is hot the batter will start baking as soon as it’s poured.
  3. CAUTION: There is a lot of hot steam trapped in the popovers, you can carefully pierce each one with a knife to release some of the heat/steam if desired. This is optional as it will also deflate a bit when you do this.
