These Cranberry Brie Puff Pastry Bites are an easy appetizer recipe for a holiday party!

When I first started working on this recipe for Cranberry Brie Puff Pastry Bites I knew I wanted it to be special.

I decided that it needed to be made with a homemade cranberry sauce.

So before I could make these Cranberry Brie Puff Pastry Bites I needed to first create a cranberry sauce recipe.

Because I planned on using the cranberry sauce for this recipe, rather than just as a stand-alone recipe, I knew that I wanted it to be delicious yet super simple.

So I began work on creating a 5 ingredient 15-minute homemade cranberry sauce recipe, which you can find here.

And while the holidays may look a little bit different this year, that doesn’t mean we can’t enjoy creating new and delicious recipes with our family.

I originally made this recipe back at the beginning of the year, before we could have ever imagined or anticipated what was coming this year.

So while this recipe does make around 50 Cranberry Brie Puff Pastry Bites, you can easily cut the recipe in half for just your immediate family.

Or you can make the full recipe and gift some to a friend or neighbor.

However you enjoy them, I hope you have a wonderful holiday season!

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit and spray your mini muffin pans with oil.
  2. Roll out both puff pastry dough sheets. Then use a 2-inch circular cookie cutter to create round dough bites.*(1)
  3. Place one puff pastry dough in each mini muffin cup.
  4. Cut the brie cheese into small pieces and place a piece into the center of each puff pastry dough circle.
  5. Add a dollop (about 1/4 teaspoon) of cooled cranberry sauce on top of each piece of brie cheese.
  6. Bake for 8-10 minutes until the puff pastry is flaky and golden brown.
  7. Let cool, top with chopped pistachios and/or thyme, and enjoy!

Notes

  1. Be sure to make your cookie-cutter cuts close together so that you use up the majority of the puff pastry dough.
