YUM!! I am so excited about today’s post. 

It’s one that I have been meaning to share for forever! 

As a child, my mom made Mashed Potato Pancakes all the time. Basically anytime we had leftover mashed potatoes we were guaranteed to get Mashed Potato Pancakes in the days that followed.

I remember the scent of fried potatoes filling the kitchen as my mom cooked & my sister & I prepared a salad, vegan/vegetarian meat, & bread to accompany the meal.

It was especially delicious when she added extra cheese to the leftover potatoes. Which, of course, is exactly what I did for this recipe too! And I especially loved that it was so quick to make because no matter how much I ate as a child I was always hungry again a couple hours later.

Since it is a favorite food memory from my childhood I am surprised it has taken me so long to share it with you.

But since Thanksgiving is coming up in just a couple of months, I thought that it is the perfect time to share these Mashed Potato Pancakes because it is a great recipe for leftover Thanksgiving food.

And it’s way more fun than simply reheating, it’s like creating a whole new dish without needing a whole new list of ingredients!

You can use any type of mashed potatoes that you have left over from dinner or Thanksgiving! You can also switch it up & use different types of cheeses. 

For example, goat cheese (although you might want to decrees the amount in the center since it has a strong flavor) with lemon rosemary mashed potatoes or pepper jack with Mexican mashed potatoes.

This is such a simple recipe, which makes it even easier to customize the flavor of the potatoes & cheese to the taste of those eating your yummy Mashed Potato Pancakes!

You can make a variety of types of Mashed Potato Pancakes simply by changing the type of cheese to please even the pickiest of eaters.

Mashed Potato Pancakes

Mashed Potato Pancakes are an easy recipe made from leftover mashed potatoes making it perfect for leftover Thanksgiving food!

Ingredients

  • Leftover Mashed Potatoes *(1)
  • Cheese *(2)
  • Salt
  • Pepper

Instructions

  1. Create a small ball of mashed potatoes (about 1/4-1/3 cup) & make a dimple or hole in the center.
  2. Add a tablespoon of cheese to the center of the mashed potatoes, & use your hands to close the hole while rolling it into a ball.
  3. Flatten the mashed potato ball into the shape of a pancake with your hands.
  4. On a pan with melted butter cook the Mashed Potato Pancakes at medium heat until golden brown & crispy on each side. *(3)
  5. Sprinkle with salt & pepper as desired.
  6. Repeat until all of your mashed potatoes have transformed into Mashed Potato Pancakes. *(4)
  7. Top with sour cream & chives & eat while warm.

Notes

  • *1. Chilled & right from the fridge.
  • *2. I used what we had on hand, but cheddar is always a safe bet.
  • *3. Be sure to let the potato cook/fry thoroughly on one side before attempting to flip the pancake or else you run the risk of it still being too mushy & falling apart.
  • *4. You can keep your Mashed Potato Pancakes warm & crispy by placing the cooked Mashed Potato Pancakes on a baking sheet lined with foil & sprayed with oil in your oven at 350 degrees Fahrenheit.
