Lemon Rosemary Mashed Potatoes

Lemon Rosemary Mashed Potatoes should really be called Comfort Food Overload. This is definitely not a diet recipe, but a recipe for those who truly love to enjoy food and it’s many flavors. This recipe will have you coming back for seconds, maybe even thirds, and will leave you feeling more comforted than a fluffy blanket on a cold winters night.

 

What you’ll need:

4 Medium Potatoes (or 2-3 large potatoes)

2 tbs Butter

¼ heaping cup Sour Cream

½ oz Cream Cheese

3 tbs Milk

1 tbs heaping Havarti Cheese

¼ cup parmesan cheese

1/8 cup shredded mix cheese

1 Lemon – Zest and Juice

1 tsp Diced Rosemary (dried or fresh)

Optional Seasonings to Taste: Salt, pepper, dried rosemary, dried thyme, Season All (Morton seasoned salt), and  Au Naturall Pure Seasoning.(affiliate link)

First, clean, skin, and cut out any bad spots on the potatoes. Then dice the potatoes and place them in a pot of salted cold water on the stove at medium high.

While the potatoes are cooking, dice the rosemary and zest the lemon.

 

Once the potatoes are done cooking, drain the water and return the potatoes to the stove.

Next, add butter, havarti cheese, Parmesan cheese, shredded mix cheese, sour cream, cream cheese, and milk.

 

Then add the lemon zest, rosemary, a squeeze of lemon juice, and seasonings.

 

*The size of your potatoes could effect the results, so if you think your mashed potatoes need to be creamer throw in some extra milk, sour cream, or cream cheese… I usually do!

 

*Keep your stove on low to keep your mashed potatoes from getting cold.Enjoy as the main course or as a side!
