Roger & I ate this flavorful Cilantro Lime Black Bean Rice for dinner a few weeks ago, but because it is so quick & easy to create I can easily make it up for lunch between projects.
Cilantro & lime are two of my favorite Mexican flavors so you know this recipe is a winner in my book.
And now when I’m craving rice I have a quick go-to recipe!
Growing up in a half Asian home, rice was a staple ingredient in a lot of our meals.
So as you can imagine I’ve been craving rice a lot recently & I made sure to stock up on Success® Boil-in-Bag Rice for any time I am craving a yummy rice dish.
There’s no mess involved & the product can be prepared on the stove or in the microwave.
I usually opt for the stove simply because I love my stove, but I also love knowing that I have the option to cook it up quickly in the microwave too.
I used the Success® Boil-in-Bag Jasmine Rice for the recipe below, but you could also try this recipe with Success® Boil-in-Bag White Rice or even the Success® Boil-in-Bag Quinoa.
I’m a huge fan of anything that makes preparing meals easier without sacrificing quality.
And I love that this 15-minute recipe is full of fresh flavor that your whole family will love!

Cilantro Lime Black Bean Rice
This Cilantro Lime Black Bean Rice is made with less than 10 ingredients & in under 15 minutes!

- Total Time: 15
- Yield: Serves 4-6 1x
Ingredients
- 2 Success® Boil-in-Bag Jasmine Rice
- 1 Tablespoon Extra Virgin Olive Oil
- 1/4 Cup Sweet Onion, diced
- 2 Large Cloves Garlic, minced
- 1/4 Teaspoon Salt
- 1 Can Black Beans, rinsed
- 1/2 Cup Cilantro, chopped
- 2 Tablespoons Lime Juice
Instructions
- First, cook 2 of the Success® Boil-in-Bag Jasmine Rice according to their packaging instructions.
- While the rice is cooking, heat a large pan with 1 tablespoon olive oil over medium heat & cook the 1/4 cup onion, minced garlic & 1/4 teaspoon salt for 2 minutes or until fragrant.
- Then add the black beans & cook for an additional 3-4 minutes.
- Add the rice, 1/2 cup cilantro, & 2 tablespoons lime juice to the black beans.
- Cook for 2 more minutes & enjoy!
