Oh my yum!

I’m seriously obsessed with these Dark Chocolate Crinkle Cookies!

Like head over heals, skip the store-bought presents and just bake me up a batch of these Christmas cookies!

I started developing this rich dark chocolate cookie recipe last Christmas and shared the yummy results with family down in Florida.

And they were a huge hit!

But I wanted to tweak the recipe a bit more, not because of taste, but rather, for presentation.

I wanted these to be the richest, chewiest, and thickest crinkle cookie you have ever tasted!

So I kept working on it.

But with 0 complaints, because there is no such thing as too many of these Dark Chocolate Crinkle Cookies!

And along the way, I learned some helpful tips to create extra thick crinkle cookies.

3 Helpful Tips:

1. When chilling the cookie dough, divide it between 3-4 plastic wraps so that you can pull out just one at a time and keep the rest cold in the fridge while baking a dozen at a time.

2. Roll the cookie dough into an oval with a flat bottom (rather than a ball) so that the dough will spread less and you will have taller cookies.

3. While your first batch is in the oven, roll the second batch, and put the baking sheet of unbaked Dark Chocolate Crinkle Cookies in the fridge to keep cold until you are ready to bake them.

(Yes you could bake them on a lower shelf, but I’ve noticed that the baking time is different. And the more you open and close the oven the more heat that leaves the oven causing the baking time to vary even more.)

Ingredients

Scale

Instructions

  1. First, whisk the 2 & 3/4 cups flour, 1 cup cocoa powder, 2 teaspoons baking powder, and 1/2 teaspoon salt in a medium bowl. Set to the side.
  2. Next, use a stand mixer to beat the 1 cup white sugar, 1 cup dark brown sugar, and 3/4 cup butter for two minutes at medium speed until light and fluffy.
  3. Then add the 4 eggs and 2 teaspoons vanilla extract and continue beating at medium-low speed until thoroughly combined.
  4. Fold in the dry ingredients and then beat in your mixer at medium-low speed until combined.
  5. Place the dough on plastic wrap and tightly wrap it up.
  6. Chill for 2 to 24 hours so that the dough is completely chilled inside and out.
  7. Once chilled, preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  8. Fill a large shallow bowl with 1 cup powdered sugar and use a cookie scoop to create 2-inch dough balls. Roll each ball in the powdered sugar until it is thoroughly covered and then place them on the baking sheet approximately 2 inches apart from each other.
  9. Bake for 13-15 minutes. Then let the cookies cool on their baking sheet for an additional 3-5 minutes before transferring them to a wire rack. *(2)
  10. Once they reach room temperature you can serve them or keep them stored in a sealed container for up to 5 days.

Notes

  1. Use a spoon to scoop the flour into the measuring cup to prevent compacted flour when scooping.
  2. Be sure to let the hot baking sheet cool completely before baking more cookies on them, or they will bake unevenly.
