These vegetarian Black Bean Mango Tacos are loaded with fresh ingredients like avocado, red cabbage, & mango!

More often than not I am craving soft tacos.
I don’t really care what is in them, as long as they are vegetarian & full of fresh flavor.
So I decided to make a summer version of the Black Bean Sweet Potato Tacos that I made last fall.
And because summertime means lots of fun bright colors, I decided that I wanted to add as many tasty colors to this dish as possible.
So along with the green avocado, red cherry tomatoes, & yellow mango, I also added some red cabbage.
Now, this may sound like an interesting addition to some people (& I honestly wasn’t sure if Roger would like it), but it was absolutely delicious & added a really nice crunch.
Plus Roger loved it too, which always makes it a win in my book!

Black Bean Mango Tacos
These vegetarian Black Bean Mango Tacos are loaded with fresh ingredients like avocado, red cabbage, & mango!

- Cook Time: 10 minutes
- Total Time: 20 minutes
- Yield: 8 soft tacos 1x
Ingredients
- 1 Tablespoon Vegetable Oil
- 1/3 Cup Sweet Onion, diced
- 1 Large Garlic Cloves, minced
- 1/2 Teaspoon Cumin
- 1/2 Teaspoon Paprika
- 1/2 Teaspoon Black Pepper
- 1 Lime, squeezed
- 1 Cup Corn, fresh or frozen
- 1 Can Black Beans (15 oz), rinsed & drained
- 8 Soft Taco Tortillas
- 1/4 Cup Queso Fresco, crumbled
- 1/4 Cup Red Cabbage, sliced
- 1/2 Cup Cherry Tomatoes, sliced
- 1 Avocado, peeled & sliced
- 1 Large Mango, peeled & diced
Toppings (optional)
- Sour
- Salsa Verde
- Cilantro
- 1 Lime, sliced
Instructions
- In a large pan drizzle 1 tablespoon vegetable oil & cook the 1/3 cup diced onion, 1 large garlic clove, 1/2 teaspoon cumin, 1/2 teaspoon paprika, & 1/2 teaspoon black pepper for 3-5 minutes on medium heat, stirring occasionally.
- Add the lime juice, 1 cup corn & 1 can black beans & cook for 5 minutes, stirring occasionally.
- Fill the tortillas with your black bean & corn mixture, top with cheese, red cabbage, cherry tomatoes, avocado, mango, sour cream, salsa verde, cilantro, & a squeeze of lime.
- Place your tacos in a taco rack for extra easy serving & enjoy!
