Oh goodness…
Just thinking about this Cheesy Enchilada Orzo is making my mouth water.
This is one of those recipes that will quickly, no, INSTANTLY become a favorite in your family like it did in ours.
I love a good & easy Mexican recipe that is loaded with fresh flavors like cilantro & lime, has a good crunch from the corn & fresh bell pepper, & is covered in cheesy enchilada sauce.
This recipe can be made in 30 minutes so that you can quickly make it & enjoy it with your family.
Plus it’s easy to clean up because the whole dish can be made in just one pot or pan.
And of course, I had to top it with a big dollop of sour cream, an extra squirt of lime, & lots of cilantro since those are some of my favorite ingredients!
This recipe serves 4-6 people, so since I made this in the middle of the day while Roger was at work I saved the leftovers & then baked it in glass bakeware the next day for dinner.
Roger loved it!
And I loved it just as much the first time as I did the second time!

Cheesy Enchilada Orzo
This Cheesy Enchilada Orzo is the perfect addition to your Mexican dinner & is loaded with corn, pepper, black beans, cilantro, & cheese!

Ingredients
- 2 Tablespoons Vegetable Oil
- 1/2 Yellow Onion, diced
- 2 Garlic Cloves, minced
- 1 Cup Corn Kernels, fresh or defrosted
- 1 Large Red Pepper, diced
- 1 Large Slicing Tomato, diced
- 4.5 Ounces-Green Chillies
- 1 Cup Orzo, uncooked
- 2 Cups Vegetable Broth
- 1 Teaspoon Salt
- 1 & 1/2 Teaspoon Cumin
- 15 Ounces Black Beans, rinsed
- 1 Cup Enchilada Sauce
- 3 Tablespoons Fresh Cilantro, chopped
- 1 Lime, juiced
- 4 Ounces Cream Cheese
- 1/2 Cup Cheddar Cheese, shredded
- 1/2 Cup Pepperjack Cheese, shredded
Toppings
- 1 Vine Ripe Tomato, diced
- Cilantro, chopped
- Sour Cream
- 1 Lime, sliced
Instructions
- Heat 2 tablespoons oil in a nonstick fry pan over medium-high heat then add 1/2 onion & 2 minced garlic cloves. Cook for 2 minutes, stirring occasionally.
- Stir in 1 cup corn, 1 diced red pepper, 1 diced tomato, green chilies, 1 cup orzo, 2 cups vegetable broth, 1 teaspoon salt, & 1 & 1/2 teaspoon cumin.
- Cover & cook for 12 minutes, stirring occasionally.
- Next, stir in the black beans, 1 cup enchilada sauce, 3 tablespoons fresh cilantro, lime, 4 ounces cream cheese, 1/2 cup cheddar cheese, & 1/2 cup pepper jack cheese.
- Cook uncovered, for 5 minutes, stirring occasionally.
- Serve topped with fresh cilantro, sour cream, & lime.
