How to Create a Quick Healthy Breakfast to Go for those with a busy lifestyle who still want to indulge on the good things in life.
I have been impatiently waiting to tell you something super exciting! If you follow me on Instagram you might have already seen the news on Instagram Stories, but just in case you haven’t heard, my husband started a new job last week! He bought a practice & is now practicing dentistry out of a restored victorian mansion. It’s absolutely gorgeous! And now that he has his own office, originally used as a living room, I’ve decided to start joining him at work a couple of times a week.
I know that might be weird to some, but I have a lot of very good reasons for doing so.
One, I love my husband. As crazy as this might sound, I want to spend as much time with Roger as possible. Five years ago we signed a contract committing our lives to each other & it seems a little unfair that he will be spending the majority of his time not with me. Haha, & yes I know that sounds needy, but he is my best friend, why wouldn’t I want to be with him if I can?
Two, it’s family dentistry & I am his family. I want to help my husband as much as I can to build his practice. Whether that means running errands with his office manager, bringing my husband lunch, or meeting new patients, I want to be involved & I want to help.
Three, I enjoy rotating work environments. As surprising as this might sound, it can get lonely sitting at home, by myself, huddled in a little corner, & staring at a computer all day. Who would have guessed?
I could go on & on with my list of reasons, but you get the point. So to work with Roger I go!
This means that instead of waking up at 6:10 am & groggily making Roger breakfast I will be hurriedly getting ready at home & in the car. But no matter what our schedule is from day to day, breakfast is still the most important meal of the day, & if I don’t eat I can be known to get a little very hangry. So to save our marriage we will always need to have a quick breakfast plan for on the go. And because I like making lists for myself I created a little list to keep our new early mornings together organized & delicious.
And since I am so excited about this new adventure I thought I would share with you How to Create a Quick Healthy Breakfast on the Go with the help of VitaTops to make your mornings simple and easy when you are in a hurry to get out the door.
1. Pre Wash Fruit in Vinegar Water (for the whole week)
One of my favorite tricks for prepping food for the week is to pre-wash all of my fruit in vinegar water & keep it stored, ready to eat, in our fridge. There are a lot of vinegar to water ratios online, (some even say 1 cup of vinegar to a sink full of water – but how do I know if your sink is the same size as my sink?), so, to be honest, I never measure. I use my biggest mixing bowl, pour vinegar in the base, add my fruit, & fill it up with water until the fruit is completely covered. If the fruit floats I add a small plate on top so the fruit sinks below the water.
I then let it soak for 10-15 minutes, rinse it in a colander, rinse out the bowl (it will be filled with dirt & sand), & then soak the fruit again in cold water for another 10-15 minutes. Finally, I rinse it one more time in a colander with cold water. I then store it in in a container with a paper towel at the bottom.
I’ve also notice that fruit washed in vinegar water stays fresh longer! Yay for longer lasting fruit!!
I must have something sweet for breakfast. I know that might sound silly, but it is the little things that can turn an early morning into a happy morning. 4. Something Savory
A quick & easy ways to do this is to cook a bunch of eggs on Sunday, scrambled or however you prefer your eggs, then put them in a tortilla wrap, a croissant, a bagel, etc. & freeze them. Then each day you pull one out of the freezer & microwave it while you finish getting ready. Quick, easy, & still homemade! 5. One Location Grab & Go
One of my best tips for a quick & healthy breakfast on the go is to stay organized. Nothing makes a good morning turn sour quicker than a disorganized morning. If you have everything prepped & in its place, then even if you accidently wake up late, you will still have a delicious & healthy breakfast ready to go & be enjoyed on your commute or at work.
Some of my favorite tricks are to have a specific location for everything & to simply do a quick check the night before. The outfit is chosen. Coat, shoes, & keys by the door. Fruit all clean & stored on one shelf in the fridge. VitaTops MuffinTops & frozen breakfast sandwiches in a central location in the freezer for a quick grab.
