Freeze-Dried Flowers Cheesecake

This Freeze-Dried Flowers Cheesecake is topped with a white chocolate drizzle, sprinkles, edible sugar flowers, and freeze-dried real flowers to create a very beautiful spring and summer cheesecake.

My mom makes the most amazing homemade cheesecake that’s better than any other cheesecake I’ve tasted.

But sadly, I did not have time to make it this past weekend.

Between a 3-year-old, a 3-month-old, and some really big house projects, our lives have been pretty busy this spring, and I don’t foresee things slowing down anytime soon.

But that’s ok, because we are making lots of memories while finishing our home.

Hopefully next year I’ll be able to start sharing more homemade recipes again, but that’s just not the season of life we are in right now. (ps. I already have it in my schedule to share her homemade recipe in January. I know it’s a ways away, but that’s how far out I have things planned.)

And whether you have time to make a homemade cheesecake, or barely have time to pick one up that’s already made (that was me last week!), this is a super fun and easy way to top and decorate a cheesecake.

I spent a lot of time searching online for food safe flowers, and I finally found these gorgeous freeze-dried flowers that you can eat!

And I’m absolutely obsessed with how pretty this Freeze-Dried Flowers Cheesecake turned out!

Instructions

  1. First, place your cheesecake on a pretty platter and cut your cheesecake into as many pieces as you need.
    • For pretty slices, run the knife under hot water and wipe clean between each cut.
  2. Next, melt your white chocolate according to the packaging instructions.
    • If it’s too thick after melting, add a little bit of coconut oil to thin it out.
  3. Drizzle the white chocolate in swirly circles on your cheesecake.
  4. Then top your cheesecake with the pink and white sugar roses.
    • I placed one of each color on each cheesecake slice.
  5. Sprinkle all 4 types of sprinkles around the cheesecake.
  6. Carefully place the freeze-dried flowers on the cheesecake.
    • I strategically placed the whole flowers on individual slices and then sprinkled the flower petals over the whole cheesecake.
  7. Keep chilled until ready to eat and enjoy!
