These 4th of July Ice Cream Bars are the perfect sweet treat for Independence Day.

This little ice cream hack is an easy way to “make” a 4th of July dessert that looks extra special and tastes great too!

I will note that I used an ice cream bar that already had 2 layers of chocolate, so these ended up having a really thick coating once the color was added.

But I have two alternatives in the recipe card (below) that you may like.

And honestly, we loved them! (The only person who struggled to get through the thick chocolate coating was my 92-year-old grandma, but she loved it and was determined to eat it.)

You do have to work quickly so the ice cream doesn’t melt when dipping them, but I have some tips to help you when making them for your next summer party!

These 4th of July Ice Cream Bars are a quick Independence Day dessert hack using store-bought ice cream bars and topped with red, white, and blue candy melts and sprinkles.

Instructions

  1. First, melt the red candy melts according to their packaging instructions.
  2. Place a piece of wax paper on a baking sheet, remove a few ice cream bars from their wrapper, and place them on the baking sheet. 
  3. Dip an ice cream bar into the melted red candy melts, shake off the excess, and place it on the baking sheet.*
  4. Repeat steps 2-3 on as many ice cream bars as you want to be red.
  5. Place the baking sheet in the freezer with the ice cream bars in the freezer.
  6. Next, repeat steps 1-5 with the white candy melts and then the blue candy melts.
  7. Repeat the above 6 steps to give them a second coat, if needed.
  8. Once the ice cream bars are thoroughly frozen again, melt more red, white, and blue candy melts.
  9. Remove the baking sheet of ice cream bars from the freezer and drizzle on the candy melts then quickly sprinkle on the sprinkles before the candy hardens. I drizzled white on the red ice cream bars, blue on the white ice cream bars, and red on the blue ice cream bars. 
  10. Place the ice cream bars back in your freezer, covered in plastic wrap and/or foil, to keep chilled until you are ready to serve them.
  11.  Enjoy!

Notes

  • I used both the red, white, and blue sugar pearls that come mixed together along with the larger white sugar pearls.
  • You can keep the baking sheet with the wax paper on it in the freezer, and then place the dipped ice cream bars immediately in the freezer if you are worried about them melting.
