These Hot Chocolate Truffles are the perfect addition to an adventure at Snowshoe Mountain Resort in West Virginia.
A couple of weekends ago Roger & I went on a winter wonderland adventure!
We drove up north & stayed at the Snowshoe Mountain Resort in West Virginia where we explored the wilderness through skiing & snowboarding, drank copious amounts of hot chocolate, watched the snow fall upon the resort village, slid down the Coca-Cola Tube Park countless times, & made a mountain of memories throughout the whole weekend.
As we drove up the backroads to Showshoe Moutain Resort I could not stop staring out the window at all of the gorgeous snow!
Roger & I took a snowboarding course in college, so it had been about 8 years since we had seen this much snow.
The whole place was breathtaking!
I couldn’t even make it completely out of the parking lot before I asked Roger to take a photo of me with the picture perfect snow-laden trees at Snowshoe Mountain Resort.
Let’s just say that I walked pretty slow as we made our way through the resort to check-in at Allegheny Springs.
I wanted to take in all of the beauty!
Once checked in we made a plan for our weekend & headed out to the slopes.
We had arrived that morning so that we could spend the second half of our day getting back into the swing of falling in style.
Well, technically Roger only fell a few times (which is amazing since it has been a while since he snowboarded), but I am the queen of falling!
But it’s not the snow’s fault, I’m just naturally clumsy.
Plus, I decided I wanted to try something new, skiing!

Saturday night was probably my favorite snow adventure as we went sledding down the Coca-Cola Tube Park at night with the snow falling all around us.
To be honest, I was a bit nervous at first because speed is not really my thing, but oh my goodness… Seriously so much fun!
We kept saying, “just one more time” every time we reached the bottom of the hill.
Roger kept trying to figure out which course was the fastest, but somehow one of the other tubers (usually a kid) always beat him to the bottom.
I highly recommend that you reserve a two-hour slot in your weekend (which you can reserve at the Depot) for this fun family experience.
Before we headed up to Snowshoe Mountain Resort for the weekend I made a batch of Hot Chocolate Truffles so that I could take some up with us on our trip to be enjoyed in the snowy wonderland.
These Hot Chocolate Truffles can be topped with any of your favorite hot chocolate additions, like crushed peppermint, tiny marshmallows, or even cocoa powder!
Then you just add it to a hot cup of Core Power® which still has 26 grams of protein per bottle!

Hot Chocolate Truffles
These Hot Chocolate Truffles are the perfect addition to an adventure at Snowshoe Mount Resort in West Virginia.
Ingredients
Hot Chocolate Truffles
- 2 & 1/2 Cups Melting Chocolate
- 1 Cup Heavy Cream
- 1 Tablespoon Sugar
- 1 & 1/2 Teaspoons Pure Vanilla Extract
- 1/8 Teaspoon Salt
Toppings
- Cocoa Powder
- Crushed Peppermint Sticks
- Dark Chocolate, melted
- Tiny Marshmallows
Instructions
- Place all of the ingredients in a medium pot & melt on medium-low heat, stirring frequently.
- Once all of the ingredients are combined pour the ganache into a bowl, cover with plastic wrap, & place in your freezer to chill for 1-2 hours.
- Once chilled, create truffle balls with an ice-cream scoop, about 2 tablespoons each, & place them on a baking sheet lined with parchment paper.
- Pop the truffles in your freezer for 1 hour, or until thoroughly chilled.
- You can then leave them as is or roll them with a variety of toppings like cocoa powder, crushed peppermint sticks, melted dark chocolate, or tiny marshmallows!
- Store in a sealed container in your fridge for up to 2 weeks.
- Drop 1-2 Hot Chocolate Truffle in a mug of hot Core Power® Chocolate (14 ounces) for a delicious hot chocolate experience!
