This Mosaic Fruit Salad is the perfect summer treat!
I love a refreshing fruit salad, and this one is loaded with fresh, juicy summer flavors.
And to make it extra fun, I cut the watermelon, cantaloupe, cucumber, and feta into little squares.
This plate was pretty big, and we ended up enjoying the extras (the pieces I cut off) as a snack after making it, and then saved this delicious plate of summer fruit for the next day.
The three of us ate it for breakfast, and there was just enough left for little Roger Dale and me to eat what was left for lunch, too.
When I was a kid, we ate a lot of feta, to the point where I went over a decade with not being a fan of it.
But tastebuds are always changing (it’s why we should always try things again and again), and after eating this Mosaic Fruit Salad, I was shocked to find that I am once again a fan of feta!
