Summertime grilling is here and I have a delicious summer grilling recipe that you can make in your kitchen, without a traditional grill!

For years I’ve wanted to grill at home, but without a grill (or a place to grill outside), it’s always been impossible.

Then I found a cast iron grill pan and everything changed.

I’ve been grilling up all kinds of fun recipes!

But something important that I learned early on is that you need the right oil when grilling, especially if you plan to grill in your kitchen.

Mazola Corn Oil has a high smoke point (450˚ F) which makes it great for grilling and stir-frying at high temperatures.

I’ve used it for all kinds of grilling recipes, from grilling vegetables for fajitas to cheese like halloumi for a salad to marinated veggies for a yummy greek veggie platter.

This Marinated Grilled Vegetables with whipped feta and honey is the perfect side dish for your next Mediterranean dinner.

Ingredients

Vegetable Marinade

  • 1/2 Cup Mazola® Corn Oil
  • 1 Lemon, juiced
  • 1 Tablespoon Honey
  • 1 Tablespoon Fresh Thyme
  • 1 Tablespoon Fresh Rosemary, chopped
  • 1 Tablespoon Fresh Parsley, chopped
  • 1 Tablespoon Fresh Basil, chopped
  • 1/8 Teaspoon Salt
  • 1/8 Teaspoon Black Pepper
  • Carrots, cut in half lengthwise
  • Squash, sliced
  • Zucchini, sliced
  • Asparagus
  • Cherry Tomatoes
  • Small Peppers

Whipped Feta Ingredients

  • 6 Ounces Feta
  • 4 Ounces Cream Cheese, room temperature
  • 1 Tablespoon Mazola® Corn Oil
  • Honey, to taste

Sides & Toppings

  • Pita, cut into triangles
  • Fresh Herbs

Instructions

  1. In a small bowl whisk together the 1/2 cup Mazola® Corn Oil, 1 juiced lemon, 1 tablespoon honey, 1 tablespoon thyme, 1 tablespoon rosemary, 1 tablespoon chopped parsley, 1 tablespoon chopped basil, 1/8 teaspoon salt, and 1/8 teaspoon black pepper.
  2. Place the vegetables in a baking dish and pour the marinade on top. Cover and refrigerate for 15-30 minutes.
  3. While the vegetables are marinating, place the 6 ounces feta, 4 ounces cream cheese, and 1 tablespoon Mazola Corn Oil in a food processor and blend until smooth.
  4. Place the whipped feta in a bowl and top with honey to taste. Set to the side.
  5. Once the vegetables have marinated, place your cast iron grill pan over high heat.
  6. Once the grill is hot turn the heat down to medium and place the vegetables on the grill in a single layer. Cook for 3-5 minutes rotating the veggies halfway through.
  7. The veggies are done once they have charred grill marks on all sides. Repeat the grilling process until all of the veggies are grilled.*(1)
  8. Place the marinated grilled vegetables, sliced pita, and whipped feta cheese on a plate topped with fresh herbs.
  9. Serve and enjoy!

Notes

  1. Cooking time will vary by the vegetable, its size, and its density.
