These Creamy Ricotta Asparagus Tarts are the perfect spring appetizer for your Easter party.

Do you feel spring in the air? It’s still incredibly cold here in southeast Tennessee, but I’m not letting that get me down. I’ve been having so much fun creating & sharing spring content on my blog.
I’ve redecorated our kitchen with spring decor at least 4 or 5 times in the last 3 weeks. It’s so much fun to move things around as more flowers begin to bloom & I bring them into our home.
When I stepped into The Fresh Market last week, to pick up supplies for a new Easter recipe, I felt like I had stepped into the secret garden. There were so many beautiful options. I spent a good 5-10 minutes wandering around their flower department picking up an array of gorgeous blooms.
And every time I tried to focus back on my grocery list to pick up the items I needed for this recipe I somehow looked up & found myself back in the flower section.


I finally decided to pick up a couple of bouquets to place in our kitchen & I love how these pink & white tulips look in this antique blue jar Roger’s grandmother gave me a few years ago.
Once I had the flowers settled into our shopping cart I was able to better focus on the fresh fruits & veggies. From seasonally fresh produce to exceptional cheeses, signature baked goods & carefully curated organics, all the foods you love are waiting for you at The Fresh Market.
And since there are so many options I had a hard time deciding between asparagus & asparagus tips. After a little more consideration I decided to go with the whole asparagus so that I could use the tips for this recipe & the stalks for a pasta dinner.
Before heading to the cheese section we made a mini detour back to the front of the store to look at all of the spring chocolates.
The Fresh Market has hand-picked an extraordinary selection of specialty seasonal candy with decadent Easter goodies that are only available for a limited time so I made sure to make a few circles around this section before making my selection.
I finally decided upon a large Lindt Easter Bunny along with a set of 5 mini Lindt Easter Bunnies.


We then strolled over to the cheese & bread department for a fresh loaf of bread to pair with our cheese. And because this is our favorite food section we couldn’t leave without picking up three different types of cheese, fresh gouda, burrata, & Parmigiano-Reggiano.
At first, I couldn’t find the Parmigiano-Reggiano & I couldn’t figure out why I was having such a difficult time finding it. I then asked someone behind the cheese counter & he directed me to a large display, next to the cold cheeses.
I felt so silly, how could I have missed it? Luckily this specialty grocer has fresh, delicious food with friendly service in a warm & inviting atmosphere & he kindly pointed out all of the options.
The display was taller & wider than me & filled with a variety of sizes from small chunks to a whole wheel. Like a gigantic wheel of Parmigiano-Reggiano.
And while I will admit that I was tempted to put the whole wheel in my cart, I decided to stick with a piece that I could easily lift & place in our cart.
We then headed to the checkout with all of our fresh & delicious items in tow.


These Creamy Riccota Asparagus Tarts were a cinch to put together. I love how they look fancy, but only take a few minutes to put together before baking.
I’m pretty much addicted to lemon, so of course, the lemon zest was my favorite flavor addition.
The flaky puff pastry, zesty lemon, fresh herbs, creamy ricotta & roasted asparagus come together perfectly in this savory finger food appetizer.
Now that I have the perfect Easter recipe I just need to talk to all of our family to find out if we are going to celebrate together for brunch or an early dinner.

Creamy Ricotta Asparagus Tarts
These Creamy Ricotta Asparagus Tarts are the perfect spring appetizer for your Easter party.

Ingredients
- 1 Sheet Puff Pastry, defrosted
- 3/4 Cup Ricotta
- I Lemon, zested
- 1 Garlic Clove, minced
- 1 Teaspoon Fresh Thyme
- 1 Tablespoon Fresh Parsley
- 1/8 Teaspoon Salt
- 1/8 Teaspoon Black Pepper
- 27 Asparagus Tips
- 1 Teaspoon Extra Virgin Olive Oil
- Egg Wash
- Parmigiano-Reggiano, to taste
Instructions
- First, preheat your oven to 425 degrees Fahrenheit & line a baking sheet with parchment paper.
- Lay your puff pastry sheet on the parchment paper, cut into 9 equal squares, & poke the center 3-4 times with a fork.
- In a medium-sized bowl mix together the ricotta, lemon zest, minced garlic, thyme, parsley, salt, & black pepper.
- Place a dollop of the ricotta in the middle of each square & top each puff pastry with 3 asparagus tips.
- Brush olive oil on the top of each asparagus tip & brush the edges of the puff pastry with egg wash.
- Bake for 10-15 minutes or until puffed up & golden.
- Top with Parmigiano-Reggiano & enjoy!
